Exhaust parts ordered!
After doing a ton of research online, and reviewing, in my head, what we would need to do, plus knowing that my mechanic would find the parts local instead of shopping online for the best deal, I put together my order for replacement parts for the full exhaust, from exhaust manifold, back to the bumper.

Based on feedback online, I avoided the Bosch O2 sensors, and went with the Delphi ones instead. Not really a performance option out there, which is always my preference.

And because we were doing all of this, I figured we'd get rid of what looks like a 25 year old exhaust system.
I went with a kit I found on eBay:
This kit is a mandrel bent 2.5 fill exhaust running Jones FullBoar - FB5402.
Seller offers kits with Flowmasters as well, but went with this one as it was a tad cheaper.
If this works out well, I will do a new kit like this on the Silverado. They have one that is around the same price and runs a Jones Full Boar FB0402.
I am hoping that the mechanics came to the same conclusion that I did.
Total parts cost, $637, less than the local cost just on the catalytic converter. Everything should be here Thursday, so I will deliver those to the shop. Other parts like sensors, etc, they can source locally. Most of those will be Napa/Autozone/O'Reilly parts, and they can run with those.
I also have the brake system to worry about, but I think I already have that narrowed down as well. As the pedal is all the way to the floor and I have to stand on it to get brake pressure, my thought, also based on my own severe amount of online research, is that the check valve may be bad, if it's not the line running to the brake booster. If it's the check valve (which is a simple check) we can replace with this:

If it's the hose, that is a cheap fix, but if it's the booster, I will be stuck with a Cardone reman unit. Once that is sorted, I can have them look over the brakes and then I can decide if I am going to do that upgrade now or if it can wait.
And of course, the results of the safety inspection.
